We buy from three local farms every week and rebuild the menu around whatever's actually in season β€” not the other way round.

Cooked over open flame

Our grill runs on seasoned wood, not gas. It's slower, it's harder to control, and it's the reason our char tastes the way it does.

A kitchen, not a factory

Every plate is finished by hand by one of eleven cooks. No central commissary, no reheated trays β€” just people cooking.
